Preventing Foodborne Illness: Cleanliness

We recently discussed some of the major ways that restaurants can minimize and prevent contamination and foodborne illnesses. In this segment of the article series, we’re going to closely examine what it means to implement cleanliness in a restaurant, which can be shared with your clients. More importantly, address their Restaurant Insurance needs, complete with a Foodborne Illness policy, with a comprehensive package.


Preparation cooks and sous chefs should protect their hands from encountering unnecessary bacteria. Food should never come into contact with them, especially if they have any open cuts or sores. Your clients should provide disposable gloves for all kitchen staff to prevent the transfer of bacteria.


After handling raw ingredients, especially poultry, hands should be thoroughly washed in warm water and soap for at least 20 seconds. According to the USDA, thoroughly wash with hot, soapy water all surfaces that come in contact with raw meat, poultry, fish, and eggs before moving on to the next step in food preparation. Consider using paper towels to clean kitchen surfaces. If you use dishcloths, wash them often in the hot cycle of your washing machine. Keep other surfaces, such as faucets and counter tops, clean by washing with hot, soapy water.

Cutting boards.

All cutting boards and prep surfaces should be washed in hot, soapy water after each use. Rinse thoroughly and pat dry with paper towels. Further, non-porous acrylic, plastic, glass, and solid wood boards can be washed in a dishwasher (laminated boards may crack and split). Even plastic boards wear out over time. Once cutting boards become excessively worn or develop hard-to-clean grooves, replace them, explains the article.

Food thermometers.

When these utensils come into contact with raw foods, they should be thoroughly washed before their next use.
